Non-reverb uses
Convolution reverbs can be used to interesting effect when you use non-IR (impulse response) files instead of impulse responses. You can use it as a sort of spectral processor to impose the harmonics of one sound on another. Note that since convolution is basically the multiplication of the signal spectrum with the IR spectrum, convolution cannot add harmonics that aren't present in the source signal.
